Ingredients

  • 16 oz Lobster Bisque

  • 2 oz Shallot

  • 1 oz Roaster Garlic Paste

  • 6 L Water

  • ½ oz Roux

  • ½ oz Lemon Juice

  • 2 oz Grated Parmesan

  • 3 oz White Wine

  • 0.5 g Paprika

  • 0.5 g Butter

Directions

  • In a medium saucepan on medium heat sauté shallot and roasted garlic paste in butter.
  • Once the shallots are soft deglaze with white wine. Allow wine to cook for 3 mins and then add lobster bisque, roux, Parmesan and paprika.
  • Whisk the sauce over medium heat until you find your desired consistency.
  • Add lemon juice and serve.

Notes

  • Try over pasta and add chunks of lobster meat to make an linguine!
