16 oz Lobster Bisque
2 oz Shallot
1 oz Roaster Garlic Paste
6 L Water
½ oz Roux
½ oz Lemon Juice
2 oz Grated Parmesan
3 oz White Wine
0.5 g Paprika
0.5 g Butter
Directions
- In a medium saucepan on medium heat sauté shallot and roasted garlic paste in butter.
- Once the shallots are soft deglaze with white wine. Allow wine to cook for 3 mins and then add lobster bisque, roux, Parmesan and paprika.
- Whisk the sauce over medium heat until you find your desired consistency.
- Add lemon juice and serve.
Notes
- Try over pasta and add chunks of lobster meat to make an linguine!
